From here the Miller can control the whole process of grinding the grain, setting the sweeps, adjusting the stones and bag up the flour.

Above the Miller's head is the Tentering Gear and this system of levers ensures the gap between the stones is always correct.  It is vital that the stones never touch each other.  The gap between them is however only the thickness of a sheet of paper.

The Governors

Two large weights called the Governors fly out when the stone speed increases and lowers the levers, which brings the stones closer together.

As the flour is produced the Miller checks it for quality and fineness.  After it is bagged up, it will be taken to the ground floor ready for the public to purchase.
